Very Versatile Chicken Sandwich Filling - Crockpot

I had a recipe to try to make a philly cheese steak sandwich with chicken instead of steak.  I forgot to buy the provolone and was in a hurry so I didn't even check the recipe.  I just sliced 2 green peppers, 2 onions and placed 4 frozen chicken breasts on top of the veggies in the crockpot.  Set it for low for 7 1/2 hours.  Then shredded the meat when it was done.

Yesterday, I had a chicken sub with blue cheese on it.  My husband put cheddar, mozzarella and bbq sauce on his.

All together the chicken, peppers and onions cost approximately $5.00 to make.  This made enough filling for about 8 sandwiches so $.63 per sandwich.

Other uses:  For low carb, don't use bread - just top with cheese and eat with a fork. Or put it on chips and top with cheddar and salsa for nachos.

  1. Yum. I'd totally go for the BBQ sauce too. What a great idea to do a Philly with chicken!
