Crock Pot Cooking - Whole Chickens

Raw meat is one of the most horrible things to me.  Nothing sets off my OCD quicker than raw chicken.  Yesterday when I was rinsing the chicken before putting it in the crock pot, I of course some how splattered myself with chicken juices.  But after scrubbing down the sink and counters and changing my shirt and washing my arms off, I'm always proud of myself for getting through it and I'm rewarded with lots of yummy meat to use for the week.

Yesterday we had chicken and a side salad for dinner.

I pulled all the extra meat off the bones and used some of it to make a quick chicken salad.   I packed Mr. R a chicken salad wrap in his lunch yesterday and have enough for 1 or 2 more wraps/sandwiches.

The rest of the extra meat was mixed in a pot on the stove with a can of black beans (drained) and a can of diced tomatoes (drained).  I added cumin, paprika, chili powder and a pinch of red pepper flakes and mixed.  This made quite a bit of taco meat. 

I had a large taco salad at dinner using up some more lettuce with some sour cream, cheddar cheese, croutons and a little bit of fat free ranch dressing.  It was sooooo good.  I'll be looking forward to lunch tomorrow to eat some more of it.

It was a weird night since Little R was sick and Mr. R went to bed as soon as I got home so I was the only one that ate it.  There's a whole container left.  It probably will be lunches for the next couple days.  We have flour tortillas for burritos and plenty of lettuce for taco salads.

I put the bones and skin back in the crockpot with all the veggies still in the bottom from when I cooked the chicken.  I added an extra onion too and cooked it on low for about 12 hours.  It made 8.5 cups of stock that I froze in different size portions.

It's amazing how much we get out of one chicken.

  1. I just roasted a whole chicken, too, and it was surprising how many meals it fed us for.

  3. I seem to be in one of the few families where we don't know what whole-chicken leftovers are. There rarely are any, and if they are, they're eaten the next day in the same manner as the first time. Maybe that's why we lack greatly on chicken salad recipes and chicken sandwich recipes...
