Ingredients: cut up veggies, 1 tablespoon olive oil, salt (to taste)
I used red potatos, onions and carrots for this which is what I had on hand. Green peppers would have been really yummy to. Just cut up the vegetables, put in a baking dish, pour olive oil on top and sprinkle with salt. Then mix it all up so all the veggies get some oil on them. Cover with foil and pop in the oven at 375 degrees. Bake until the veggies reach the desired texture you like and add a little extra salt if needed.
