Crock Pot Lasagna with Lasagna Sheets

It turned out pretty good.  Forgot to take a picture, I was really hungry.  I think the noodles work better in the oven.  The crock pot probably cooked them too long so it was a little on the too soft side.  But Mr. R and the girls still liked it. And it made for a cheap dinner since I don't put meat in my lasagna.  Normally I mix an egg in with the cottage cheese and I skipped that step too and no one could tell the difference.  Here's how I made it:

1 box Aldi Lasagna Sheets - $.99
1 1/2 cans Hunt's Spaghetti Sauce - $1.32
2/3 bag of mozzarella cheese - $2.33
1 container low fat cottage cheese - $2.29
about 3/4 cup grated Parmesan cheese - $.50
Italian Seasoning - about 1 tbsp (I never actually measure.)

Mix cottage cheese, Italian seasoning and Parmesan cheese together.  Spray baking dish with cooking spray.  Add a some spaghetti sauce to the bottom of the pan to coat it.  Then layer lasagna noodles, cottage cheese mixture, mozzarella cheese and spaghetti sauce.  I try to get 3 or 4 layers.

Total Cost $7.43, Servings 8 = $.93 per serving

Served with salad for Mr. R and me and carrots with ranch for the girls.

  1. How long did you cook it? So, now I have another good crock pot recipe.

    1. 4 1/2 hr's on low. The noodles were a bit soft so I think 3 1/2 hours would be better.
