Chicken, Veggie, Egg Noodle Casserole

1/2 cup mushrooms, chopped - 75 cents
1 1/2 medium onions, chopped - 25 cents
1 can chicken breast - $1.79
1 can diced tomatoes with green chilies - 59 cents
1 can green beans, drained - 59 cents
1 can corn, drained - 59 cents
3 cups egg noodles - 50 cents
2 cans cream of mushroom soup - 1.18
1/3 cup skim milk - 5 cents
1/2 Tbsp. olive oil - 5 cents
2 cups cheese - $2.00

Sauté mushrooms and onions in olive oil.  Boil egg noodles in water.  Mix all the ingredients together except the cheese and place in baking dish.  (Use a fork to break up chicken some so it isn't in such big pieces). Top with cheese.  Bake at 375 degrees for 30 minutes or until heated through.

Made 5.66 - 1 1/2 cup servings

Total Cost of Recipe - $8.34 or $1.52 per serving
