Eggplant Parmesan - Husband Approved

My husband is a definite meat and potatoes type of guy.  And he likes a lot of meat.  So I'm always excited when I find a meatless recipe that he actually likes.  In this case, he asked for seconds and wanted me to pack left overs for his lunch.

1 egg plant, peeled and sliced into rounds
2 eggs and 1 egg white, beaten
1 cup Italian seasoned bread crumbs
1/2 cup parmesan cheese

Spray 2 baking dishes with olive oil cooking spray.  Mix bread crumbs and parmesan cheese.  Dip eggplant in eggs, then dip in bread crumb mixture.  Make sure it gets thoroughly coated and place in baking dish.  Once all the eggplant is coated and in the baking dishes, put them in the oven for about 45 minutes at 390 degrees.  I really didn't time it, just watched for it to brown on the bottoms.

Top with spaghetti sauce and mozzarella cheese and serve.
 
Only 2 points plus per piece of eggplant.  Spaghetti sauce adds another 2 points.
