Dinners

I made a really yummy crock pot meal again today.  I found it online somewhere a couple weeks ago and I think I've seen it on a few different sites before and finally decided to make it.  I didn't take a picture though.

I put 4 frozen chicken breasts in the crockpot.  Dumped a packet of Italian dressing seasoning mix, 2 cans of cream of chicken soup and an 8 oz. pack of Neufchatel cheese in the crockpot.  I set it on low for 7 hours.  When I stopped home at lunch, I stirred everything together some and put the lid back on to let it keep cooking.   When I came home from work, I used two forks to break up the chicken some and served it over egg noodles.

I think next time I might add peas to it so its a one dish meal.  Well 2 dish cause of the noodles.

I only have 7 days left of my August Grocery Shopping Challenge.  My last day will be August 29th since the 30th is pay day and that's the day I usually do my big bi-weekly shopping trip.  Mr. Ripples is not really into "making do" with what we have so if I want to be successful with my challenge, I need to keep lots of easy, good snacks and meals prepared.  If not, he'll go to the store and buy a whole bunch of junk.

Tomorrow, we'll probably have turkey burgers and hot dogs with a vegetable on the side. 

Other meals that I plan on making in the next week:
  • crock pot chicken and dumplings
  • crock pot chicken noodle soup
  • Italian sausages with sautéed onions and green peppers
  • turkey burgers (again)
  • Chili (home made from freezer)
  • Pasta with spaghetti sauce (from freezer)
I also have another pound of ground chicken frozen that I don't have a plan for.  I will need to go to the store for more produce, milk, lunch meat and pop.  I have close to $30 for the week to spend on groceries.

  1. Oh, if you make the chicken and dumplings, do take pics. That's one dish everyone seems to rave about but I've never had before and it's been on my to-try-to-make list forever.
