Healthy-ish Chocolate Butterscotch Oatmeal Cookies
Regular Oatmeal - 3 Cups
All Purpose Flour - 1/2 Cup
All-Purpose Wheat White Flour - 1/2 Cup
Flaxseed Meal - 1/4 Cup
Baking Soda - 1 tsp
Cinnamon - 1 tsp
Salt - 1/2 tsp
Unsalted Butter - 6 Tbsp
Apple Sauce - 1/2 Cup
Sugar - 3/4 Cup
Brown Sugar - 2/3 Cup packed
2 Eggs
Vanilla Extract - 2 tsp
Butterscotch Chips - 1 1/3 cup + 1 Tbsp
Chocolate Chips - 1 cup
Preheat oven to 350 degrees. Mix all the ingredients together except the butterscotch and chocolate chips. Once all the ingredients are mixed well, add the butterscotch and chocolate chips in. Spoon equal amounts of cookie dough onto parchment paper lined baking sheet.
Now, I am going to be completely honest. I just eye-balled the amount of cookie dough for each cookie so that they looked pretty similar in size. I ended up making 51 cookies, 12 of which I burned. Oops! My husband is always telling me to set the timer, but do I? Nope. That's my second confession, I didn't time these cookies. I just checked them after about 5 minutes and when I could tell the bottoms and edges were starting to brown, I took them out of the oven.
Little Ripples said she really liked them and I admit, I definitely had more than one. But, not to worry... total calories per cookie: 83 calories. Not too bad considering they are a decent size cookie.
